4th of July Potato Pancakes What better day than the 4th of July to try a new pancake! Since pancakes are one of the best things ever invented it was time to make use of our leftover mashed potatoes. As usual we didn’t use one potato pancake recipe in particular but took queues from a few different recipes on the Internet, including some ingredients from Paula Deen. Since this was our first try we were worried how they would turn out, but since I make the world’s best pancakes they... more
My Cajun Breakfast Hash Recipe
Thought I would share my Cajun Breakfast Hash Recipe. My family loves it, maybe yours will too. Ingredients: 1 Bag Simply Potato Hash Browns 1 Green Bell Pepper (red, orange or yellow are also good) cubed 1/2 Medium Sized Onion – cube – use the whole thing if you don’t care about your breath that day. 6-8 eggs 3/4 lb Ground Spicy Italian Sausage Louisiana Cajun Seasoning – “goes good on everything” 1/4 cup cooking oil Heat up oil, I would say about 1/4 cup, in electric skillet (mine has about the area of a 9 x 11 cake pan). Once it is nice and hot (350 degrees mine says) pour in Simply Potato hash browns and spread them evenly. Sprinkle a decent amount of cajun seasoning over everything. At this time you should be able to turn everything. Now, I add the eggs in... more

Back to the 50’s Car Show St. Paul Minnesota
Last Friday we headed to the 2009 Back to the 50’s Car Show in St. Paul, MN. We paid 10 bucks to get in and I over heard a guy saying it was $25 for the weekend if you had a car which allowed for two people to drive in. Pretty cheap entertainment if you ask me! If you’re into cars at all this is a must see event. There really is something for everyone, custom rat rods, vintage Impalas, chopped Mercs, you name it (as long as it is older than 1964!). The Back to the 50’s Car Show... more
Rained out!
Well, we packed up the kids and dogs last weekend and headed north to go camping at Father Hennepin right off Mille Lacs Lake. It is a beautiful camground and one we will most certainly visit again. We had anticipated rain but went ahead anyway in hopes of the weather man being wrong! (figured our odds were good). We did get one good night and day of camping in and some fishing, no we didn’t catch anything! Then about 2 PM on Saturday it started to sprinkle. We thought we would wait it out... more
Father Hennepin State Park Review
Father Hennepin State Park is 2 hours north of Minneapolis St. Paul. The park is situated in the south-east corner of Lake Mille Lacs. We were excited to stay at Father Hennepin as a co-worker had boasted that it was a beautiful park. At Father Hennepin are 2 campgrounds with a total of 103 campsites. You may also rent the group campsite at $30-$75/night The park has 2 shower buildings & 2 restroom buildings. With regular “vault” toilets located throughout the park. Upon arrival we... more
